Maltese Traditional Tuna and Spinach Pie

During the winter months we all love to eat warm, homey food… So, today I decided to share a Maltese favorite – Tuna and Spinach Pie! I made a gluten-free version, but you could easily replace the gluten free pastry to a normal one, should you wish to.

Ingredients:

Pie Crust

  • 400 grams Gluten Free Flour – I prefer to use Peak’s “Free From” Baking Mix, but I also find Doves Farm flour to be extremely workable and easy to use!
  • 50 ml Olive Oil
  • 1 tsp Salt
  • 1 tsp – Dried Mint
  • 2 tsp – Sesame Seeds
  • 1/2 cup Iced Water

Tuna and Spinach Filling

  • 400 grams Canned Tuna (two large cans) – make it dolphin friendly please
  • 1 large Onion – finely chopped
  • 1 clove Garlic – finely chopped
  • 400 grams Spinach (Fresh)
  • 100 grams – Peas (canned)
  • 1/2 cup – Fresh Mint
  • 1 tsp – Dried Mint
  • Salt & Pepper to taste
  • 1 Egg (for egg wash)
Recipe Directions:

Pie Crust

  1. Sift the flour into a large bowl.
  2. Add the salt and dried mint.
  3. Add the olive oil to the flour mix.
  4. Add the iced water bit by bit, and work with your hands until a dough is formed – do NOT overwork!
  5. Put in stretch and seal (cling film) and chill for at least 30 minutes.

Filling

  1. Sweat the onion and garlic in a large pan.
  2. Add the fresh spinach and cover. Leave for approximately 5 to 10 minutes – until the spinach is soft.
  3. Add the canned tuna and cook for two minutes.
  4. Add the canned peas and cook for a further minute.

When the dough has been appropriately chilled:

  1. Pre-heat oven to 180 Degrees Celsius
  2. Roll the chilled dough onto a greased baking dish using a rolling-pin – it has to be about 1/2 inch in thickness throughout – leave some dough for the top of the pie!
  3. Place the filling inside.
  4. Cover the filling with dough.
  5. Punch some holes in with a fork.
  6. Beat the egg with whisk to make the egg wash, then spread it over the top of the pie.
  7. Sprinkle with sesame seeds.
  8. Bake for 45 minutes – the dough needs to become a nice light brown colour.
